First of all, it's good morning fuel! Loaded with fiber from leafy greens, lean protein from hummus, egg and yogurt, as well as healthy fats from olive oil and avocado, a breakfast salad is the kind of super food that tastes delicious, but also keeps you full until lunch.

Secondly, it comes together quickly! After packing lunches and snacks for the family, all before breakfast time, a breakfast that comes together with speed and ease is super important. Cook some hard-boiled eggs the night before or on Sunday night for the whole week and this salad comes together in less than five minutes. Forgot to boil those eggs? Fry or poach an egg as a salad topper in the amount of time it takes to plate up the rest.

  1. Step 1
    Spread the hummus across the base of a wide bowl with the back of a spoon. Top with baby spinach, avocado slices, and grape tomatoes. Sprinkle with salt and pepper, then drizzle with olive oil and red wine vinegar.
  2. Step 2
    Top with the egg, then add a dollop of Greek yogurt, dash of hot sauce (optional), and broken pita chips, and sprinkle with Everything Bagel Seasoning, if you like. Stir it all up, mixing in the hummus from the bottom of the plate, and enjoy immediately.
