And did you know you can make it completely in a slow cooker without sacrificing a bit of the rich, creamy goodness? This recipe has everything: a smooth cheese sauce, perfectly cooked pasta, and tender chicken. Yet it's almost completely hands-off. You don't even have to boil the pasta! It's, dare I say, magical? Ridiculous? One of my favorite slow cooker recipes of all time?

First you cook the chicken in the slow cooker for several hours with some chicken broth, heavy cream, and garlic. Then you remove the chicken, add the pasta, and cook it for about 30 minutes. All that's left to do is add lots of scrumptious parmesan (grate it yourself for the best flavor and texture) and the chicken, and give it a big stir. You're left with an extremely creamy sauce that coats every noodle and piece of chicken with little work or cleanup to show for it. If you're looking for easy dinner recipes, this is a real winner.

Yes, about 1 1/2 pounds of boneless skinless chicken thighs can be used instead of chicken breasts.

Ingredients

Directions

  1. Step 1
To a 6- to 8-quart slow cooker, add the heavy cream, chicken broth, butter, salt, pepper, garlic, and chicken. Stir to combine. Cover and cook until the internal temperature of the chicken is 165°F, on low heat for 3 to 5 hours or high heat for 2 to 3 hours.
  2. Step 2
Remove the chicken to a cutting board. When it is cool enough to handle, slice crosswise into bite-size pieces. Cover and set aside.
  3. Step 3
Add the pasta to the slow cooker and stir to coat in the sauce. Increase the heat to high. Cover and cook, stirring occasionally, until the pasta is tender, 25 to 30 minutes.
  4. Step 4
Gently stir in the chicken and parmesan cheese. Serve topped with parsley and more parmesan and black pepper.
